Popcorn Ball Madness

Every year we try to make a holiday treat for our neighbors
at Christmas time.  This year's treat was popcorn balls.

It sounded like a simple enough treat, but with our
schedules and the lateness of the hour, it became
quite comical.

"Hurry, they're starting to harden already!"

"Ouch, that's HOT!!!"

About two times as many chocolate versus plain were made.
You see we had a lot of popped corn left over so
that made a nice snack of caramel corn and
plain popped corn for the next day.

It really is an easy thing to do if you don't wait till 9:30 at night to begin.
We found the cute bags at the dollar store so it was
also inexpensive.  The total cost for all 12 gifts
was under $10.00.  

In case anyone is interested,  here is the recipe we used:

Popcorn Balls

Corn (non-GMO)
Brown Rice Syrup
Palm Oil Shortening
Organic Sugar
Sea Salt
Cocoa (in dark ones)

(Gluten and Dairy Free)
8 c popped popcorn
1/2 c br. rice syrup
1/4 c shortening
1/2 c sugar
1/2 t salt
2 T cocoa

Bring all ingredients except popcorn to simmer over med./high heat.
Add popcorn and cook and stir three minutes or until well-coated.
Remove from heat.  Cool slightly.  Dip hands in cold water and form into
balls.  Approx. 1 cup per ball.  Cool on parchment or waxed paper.
Yields about 8 popcorn balls
