The "Big Guys" do Dinner-Gluten Free

Jonathan and Matthew have been studying about immigration to America.  In honor of some of our country's many immigrants, they made tonight's dinner with a collection of ethnic dishes.

Jonathan made "Hungarian Delight", which turned into a two-hour marathon.

He had to boil those cabbage leaves first...

...and boil more cabbage leaves...

..then he made the filling while Matthew made the "Greek Spinach Casserole" and "Irish Soda Bread".
We did eventually get to eat the dinner which was quite tasty:)
It was just an hour and a half late!

Gluten Free Irish Soda Bread:

3 1/2 c Br. Rice Flour
1/2 c Wh. Rice Flour
2 t Guar Gum
1 t Baking Soda
1 t Salt
14 oz Rice Milk (removing 2 T)
2 T lemon juice
Preheat Oven to 425.
Grease cake pan.
Combine all dry ingredients.  Add wet ingredients slowly just till mixed thoroughly.
Place dough on lightly floured surface and lightly flour dough for kneading.  Knead 3-4 times.
Form into round, flat shape and place in cake pan.  Score top of dough in cross pattern and bake for  approx. 45 min.  Put foil on the last 15 min. if becoming too brown.
